If I want them sharp, I do them
If I want them sharp enough to make your eyes bleed just by looking at them, I ask my dad to check my edge.
He uses a centuries old stone set, (or a steel if I didn't do too bad) and then follows up with a strop

I have a co-worker that has a sharpening system from russia called TSPROF SHARPENING SYSTEM. It was incredible, but it takes a lot of time for one knife. Now THAT is nice! Pricey for a sharpener, but nice.

The most I have spent on a sharpener was the Work Force; it's NOT the "Ken Onion edition".

There are plenty of demonstrations of people putting mirror edges on knives. There is even one video of a guy whittling a hair on the edge.

A knife maker lives not far from us who puts a screaming sharp edge on his knives. I just wish that he made bigger blades that I could afford.
