I have a 50/50 chance of being right, so here goes. I THINK that they take orders for the knives. They close out the order period and them make the knives. THEN they charge you for them and ship them out.

This means that the more knives they sell the greater the potential for a longer wait. Like Like Evil Spock said, Don't loose faith, you WILL get your knife.
