I have never seen a double cut in person, but from the pics, the finish looks cool.
I'm not sure what "double cut" means, but my 2007 Special Edition Steel Heart 1 has it. It looks like a very fine bead blast finish, similar to the finish on the old Gerber Utility Bowies and BMF Survival Knives.
It is not as reflective as a true satin finish. It is more like a scotchbrite finish without the lines. I like it.
