Interesting that nobody mentioned Renaissance Wax. I use Ren Wax on all my carbon steel blades. I like Ren Wax because it's dry and it leaves a nice, protective finish on both the blades and the handles. I keep dessicants in my knife storage areas and I live in a climate referred to as a "desert on the sea". So rust and corrosion usually aren't much of a problem for me.
