I agree with you on the whole, but my cutlery size/weight selection varies by terrain and remoteness! If I head towards the middle of nowhere (harder here than in the US as we are a small island!) I'd take a big knife, the 10" bowie would be ideal. In the UK you are seldom more than 40/50 mins away from air rescue so hopefully help is available if it all goes horribly wrong!
