I like convex edges on larger blades. On a smaller knife I like a flat grind or hollow grind. You dont have as much blade to work with to get the edge thinned out for a convex grind. I keep all of them sharp with a strop so I guess they will convex eventually.
This was proven to me again this weekend when I tried reprofiling a game warden. It just takes to much of the blade away to get it thinned out enough to cut as smooth as a hollow grind or flat grind.
