Yeah, I'm a bit concerned as well. When I originally saw Tom's...they looked more clean, but that may be due to his polishing. The one's here look more crude.

I guess, if you never removed the coating...then the coating on the edges would wear, leaving coating still in tact inside the grooves. Would this help smooth out the knife?
