I find keeping a convex edge sharp is less work than a V grind. But I don't chop, so can't say if that would change it.

It does require stropping more often so you can't let it get too dull. YMMV.

Do you use the sharpmaker, not2sharp? I tried reprofiling a muppy with that and miserably failed <img src="/ubbthreads/images/graemlins/smile.gif" alt="" />
