Anyone know the difference between a double cut and regular cut pork shank?
Double cut is a less refined finish....but not as unrefined as beadblasted..

It may be, but I had a couple double cut SAR 3s that were a "smoother" finish than other bead blasted finishes...from other makers at least. O.K., I will change my description to.. double cut is a highly refined bead blasted finish, much like a fine French wine.
