Bacon Parmesan Fried Chicken
Details

Ingredients Related Tips
1/2 tsp salt
1-1 1/2 cups shredded cheese – for melting on top (I used Mozzarella)
3-4 slices of bacon- cooked and crumbed (can leave slightly under-done, it will finish cooking under broiler)
1 egg beaten
1 tablespoon water
Oil for frying – about 1/2 – 3/4 cup depending on size of skillet
4 boneless skinless chicken breasts – about 4-5 oz each
1 cup grated Parmesan cheese
1/4 tsp garlic powder
1/4 tsp pepper


Directions
Preheat oven to 350 degrees
Bowl 1- mix egg and water
Bowl 2 - Parmesan cheese, pepper, salt and garlic
Bowl 3 - Grated Cheese and Bacon Crumbles
Heat oil over high heat (Make SURE it's hot)
Dip Chicken in "Bowl 1" then "Bowl 2"
Fry in hot oil until golden brown
Prepare a baking pan by covering with foil and placing wire rack on top
Place chicken on rack and bake about 20 minutes or until juices run clear
Remove from oven top with "Bowl 3" and bake it til Cheese melts

Cinnamon Cream Cheese Roll Ups

Ingredients

1 loaf of thin, white bread
⅔ bar of cream cheese, softened
½ cup powdered sugar
¾ cups sugar
1 TB cinnamon
½ cup butter, melted

Instructions

Cut off the crust of the bread.
With a rolling pin, flatten bread.
In a small bowl combine cream cheese and powdered sugar until well blended.
In a separate bowl combine sugar and cinnamon - set aside.
Spread 1 - 1½ tablespoons of cream cheese mixture onto each flattened bread piece and roll up.
Dip each rolled bread into melted butter and then into the cinnamon and sugar mix.
Place on an ungreased cookie sheet.
Repeat for remaining pieces of bread.
Bake at 350 for 16-20 minutes until golden brown. Serve warm.

Easy Homemade Apple Fritters

1 cup all purpose flour
1/4 cup sugar
3/4 teaspoon salt
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/3 cup milk
1 egg
1 cup chopped apple

Glaze:
•2 cups powdered sugar
•1 1/2 tablespoons milk

Combine flour, sugar, salt, baking powder, cinnamon. Stir in milk and egg until just combined. Fold in apple. Pour oil into skillet so that it is approximately 1 1/2 deep. Heat oil on high. Oil is ready when a little dough thrown in floats to top. Carefully add dough to oil in heaping teaspoons. Cook until brown, about 2 minutes, then flip. Cook another 1-2 minutes, until both sides are browned. Transfer briefly to paper towels to absorb excess oil, then transfer to cooling rack. Make glaze by stirring milk and powdered sugar together in a small bowl. Drizzle over apple fritters. Wait approximately 3 minutes for glaze to harden, then flip fritters and drizzle glaze over the other side. Best served warm.

Hillbilly CAST IRON Cooking

Goulash

2 lbs lean ground beef
3 medium yellow onions, chopped
3 cloves garlic, chopped
3 cups water
2(15 oz) cans tomato sauce
3(15 oz) cans diced tomatoes
2 tablespoons Italian seasoning
3 bay leaves
3 tbsp soy sauce

In large pot, cook ground beef over medium heat until browned,
spoon off any extra grease.
Add onion and garlic, saute until transparent.
Add 3 cups of water, tomato sauce, diced tomatoes, all seasonings,
soy sauce, and bay leaves (if you choose to use them).
Allow to simmer for 15-20 minutes.
Add macaroni and allow to simmer an additional 20 minutes or until tender.
Remove bay leaves before serving.

seasoning
1 cup kosher salt
1/4 cup fresh ground black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.

Taco Pie

You'll Need:
1/4 cup butter
2/3 cup milk
1 package Taco Bell seasoning mix (Copycat recipe on Budget101)
2 1/2 cups mashed potato flakes (or left over mashed potatoes-omit butter & milk)
1 pound ground beef or Turkey
1/2 cup chopped onion
1/2 cup salsa
1 cup shredded lettuce
1 medium tomato, diced
1 cup shredded cheddar cheese
Sour cream, optional

Preheat oven 350F.
In a medium sauce pan, melt butter & Add milk, 2 Tbs taco seasoning, mixing well.
Remove from heat, add potato flakes, mixing until incorporated.
Press mixture into the bottom of a regular pie plate, then Bake the "crust" for 7-10 minutes until it just BARELY turns golden brown. In the meantime, cook beef & onions in a skillet until beef is browned and cooked through. Drain. Add Salsa & remaining taco seasoning. Cook until bubbly.
Pour into crust. Bake for 15 minutes, or until crust is golden brown.
Let cool for 5 minutes. Top with cheese, lettuce, and tomatoes, black olives, jalapeno slices, etc

COPYCAT TACO SEASONING MIX



Tired of Spending $1.25 or more on a single packet of Taco Seasoning Mix? Here's our very simple copycat recipe for your favorite Taco restaurant chain. Now you can make fabulous tacos at home for just pennies.

2 tablespoons Instant flour (wondra works great!)
2 teaspoons chili powder
1 1/2 teaspoons dried minced onion
1 1/4 teaspoons salt
1 teaspoon paprika
3/4 teaspoon crushed beef bouillon cube
1/4 teaspoon sugar
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
dash onion powder

Measure all ingredients into a small ziploc baggie, makes 1 pkg of mix. (For 1 batch of Tacos)

Apple Pie Tacos.
You're welcome!
4 Apples peeled & sliced
1/2 C Sugar
2 tsp Cinnamon
1/2 tsp Nutmeg
1/2 C Water
Tortilla’s (flour) 6″ size
Oil (for frying tortillas)
1/2 c sugar-cinnamon mixture
Whipped cream
Directions
Place apples, sugar, cinnamon, nutmeg, and water in a sauce pan.
Stir until well blended and cover and cook on medium stirring frequently For 10 minutes or until apples are semi soft. If needed, thicken sauce using 1 Tbl of cornstarch to 3-4 Tbl of water.
Mix into sauce and stir until thickened. Heat oil on medium heat in a skillet and holding the tortilla folded in half, place the bottom on tortilla in the oil for a few seconds.
Then lay it on one side until browned and then place other side down until browned. Remove from oil and Sprinkle browned tortilla with sugar-cinnamon mixture. Fill taco shells with apple pie filling and top with whipped cream, and sprinkle a little more of sugar-cinnamon mixture on top.
Let it "set" on an upside down muffin tin.

CRAZY GOOD CASSEROLE

Ingredients:
4-5 boneless, skinless chicken breasts
6 strips of quality bacon
2 cans cream of chicken soup
2 cups shredded Monterrey Jack cheese
1 box (16 ounces) dried spiral pasta
1 tablespoon garlic powder
salt and pepper to taste

Directions:
Cook and crumble bacon.
While bacon is cooking, cut chicken into bite sized chunks.
Set cooked bacon aside for later use.
In the same pan cook chicken in bacon drippings.
Add garlic powder and salt and pepper to taste.
While chicken is cooking prepare pasta according to directions.
Spray a 9 x 13 pan with non-stick cooking spray.
Preheat oven to 400°F.
Drain pasta, return to pot.
Add chicken, both cans of cream of chicken soup, 1 cup of Monterey Jack cheese.
Stir to mix well.
Pour into prepared baking pan.
Top with crumbled bacon and remaining Monterrey Jack cheese.
Bake at 400°F for about 20 minutes, just until cheese is melted and beginning to brown on top.

Mrs.Burneze Coffman ,our elementary school cook recipe for Hot Rolls...

2-cups milk. 1/4 cup sugar
2-pkg. dry yeast. 2 tsp salt
1-cup Butter melted. Plain Flour
(about 4 1/2 cups)

Heat milk until warm,dissolve yeast,sugar,and salt in milk.Add 1/2 cup of melted butter to mixture,then add flour to make stiff dough.Put dough on a floured board and roll out and cut into rolls.Grease top of rolls with butter. Set in warm place and let rise ( 1 1/2 hrs.) bake at 400 for 15 to 20 min. When brown take out and brush top of rolls w/butter..( I use my kitchen aid mixer and dough hook to mix with).
