If I was limited to one it would probably be a big knife or a tomahawk similar in design to the norsehawk.
I have used one to process moose and deer, that blade shape allows you to take the handle off and use it like an ulu

Hmm sounds like a great scrap your knife design to me. User provides their own handle.

I gave my brother a Norse hawk 15 years or more ago, he has used it on moose, elk and deer.
It works great on the pelvis when quartering
I have used my Norse hawk for over 10 years, it never leaves my hunting kit except when cleaning or doing maintenance on it.
I would love a high quality SYKO version
