I'm gonna try to get setup with a strop & stropping paste..
err.. i'll prolly need a sharpmaker too.. for my V-grind knives..

I'd like to get a Strop too. Hopefully someday I'll learn freehand.

How hard is it to learn how to sharpen a knife? I am so afraid to screw up a knife.

Freehand? I'm not sure. I've never tried freehand before. But on the sharpmaker it's a cinch. it even comes with an instructional DVD. It's really easy. <img src="/ubbthreads/images/graemlins/laugh.gif" alt="" />

Are there different kinds of Sharpmakers? models, etc. w/ different stones
or.. just one?

There's only one model of Sharpmaker. But there are four different types of triangle ceramic rods. Diamond, Medium grit, fine grit, and ultra fine grit.

Which of those 4 ceramic rods do you find most useful?

I'll prolly be using to sharpen.. VG10, S30V.. and various kitchen knives..

I can't comment on the Sharpmaker from experience, but my good old Lansky kit is fine and I think it may be a bit cheaper (grit not diamond)... Sharpening freehand on an oilstone is a serious skill that you only get after wrecking lots of knives.. If you only have good knives get a Lansky or similar, money very well spent!

My SS4 had a very obtuse grind when I got it and it wouldn't cut at all. Even the sandpaper trick didn't do anything. It's now set to an 'inclusive angle' of 50 degrees with a V grind (Lansky) and is hair popping!

The Sharpmaker only comes with the Medium and Fine grit. The others are sold seperately. But they both work great. For the first sharpening I always use the Medium rods to reprofile the secondary bevel at 30 degrees then put the primary bevel at 40. After that I just touch the knife up on the Fine grit at 40 any time it needs it. <img src="/ubbthreads/images/graemlins/grin.gif" alt="" />

I sharpen mine freehand. I don't think it's too hard. Maybe I'll write a tutorial on how I do it sometime. <img src="/ubbthreads/images/graemlins/laugh.gif" alt="" />
