That is a truly great looking hawk. You could leave it totally as is and it would be awesome. I would not sand and polish it as the forged look suits it much better.
I am bluing my hawk but I don't know if it would suit the forged look of your hawk.

Here is my norse hawk now that I am almost done the sanding phase. Soon I will polish and blue it and then start on the handle. I got real lucky on this hawk as it is very straight and the handle is fantastic with great grain which is not common for hickory.

Hickory is the Sr77 of wood with strength way higher than the next closest competitor.

This photo shows how crappy CS wood usually is on my spade.
The spade was much more typical of CS with very bad grinds that needed a lot of work.

It is still an excellent tool tough.
