I welcomed fall by brewing up a batch of Old English IPA. Mmmm Beer! Oh and happy fall. Just a few more weeks at the most and the heat and humidity will break.
Lots of crystal malt and Fuggles and Styrian Goldings with 2 row English Marris Otter malt? Maybe some Willamette? Good ole EDME ale yeast?

Horned, dangerous, and off my medication.

It was nothing fancy. It was a kit that I received as a gift. I got it along with a cherry wheat kit.

Next weekend, or the weekend there after I'm going to brew that wheat beer for Turkey Day. I may or may not go the cherry route I haven't decided. I know everybody says that fruit beers are best reserved for the summer months. However, I do think cherry wheat goes well with thanks giving. Then again I may brew up a batch of pumpking spiced ale for the holidays. Maybe I'll brew up both.

Soon it'll be time to work on creating my house beer. I got a new house I need a new house ale.

Brewing is easy. There are three important things to keep in mind. First, Pay attention to temperatures. This is especially important when adding the yeast for fermemtation.

The second issue of importance is sanitation. Keep everything as clean and as sterile as you can. This is especially important when the yeast comes into play.

Lastly, you will brew the best beer in the world. Why is it the best because you brewed it.

Some of my best batches have been modified kit beers, Jerry. All that matters is how good the beer is, not how much work you put into it or whether it was a kit or an all-grain full mash recipe. Once for a Christmas beer I used 3 cans (9.9 lbs) of M & F Old Ale, one lb of brown sugar and some Northern Brewer hops. I think I used EDME dry ale yeast. I added hazelnut flavoring at bottling. It turned out being sort a Scotch Ale or almost a Barley Wine. People still ask me to make it again. It was my most awesome beer ever. I haven't brewed anything in over a year.

I've done many a modified kit. I lack a lot of creativity when it comes to comming up with a new recipe on your own. So I use the kits for inspiration, I cal them my muses. And even though this was a kit it was still a lot of work.

I've yet to have done a full grain mash. One day soon. I've got to get a little more in the way of equipment and experience before I go the full grain route.

Peace
Jerry

BTW I have fermentation

I've got a two carboy set up right now. One carboy is 6.5 gallons, the other is 5. It's a great setup as it allows me to do a lot especially when it comes to primary and secondary fermentation. Or, I can brew two batches simultaniously.

I brew everything up in a 5 gallon stainless steel pot. Stainless is great because it makes cleaning oh so easy. I've also got a giant stainless spoon that I use to stir everything up.

I'm slowly switching over to an all stainless and glass set up. Right now my air locks are plastic, but that will change.

I'm not into keging my beer so I bottle it. I've got roughly 5 cases worth of bottles. So I'm good for about 3 batches at once. If I purchase beer like Sams Adams, Flying Dog etc... I keep the bottles as I can clean them and reuse them. I used a press bottle capper to seal everything up.

There are a few more pieces of equipment that I want to purchase such as a wort chiller, and a few other things if I start to get into all grain batches.

Peace
Jerry

Personally, I think all-grain brewing is a waste of time. There are so many good extracts available today, the only grains you really need are specialty malts like crystal malt and chocolate malt for flavor and color. Never had much luck with those expensive liquid yeasts, either. Would you mill your own wheat to bake bread? Glad you have fermentation. A good fast start usually means a good batch. Brew on!
