On an unrelated topic, I just have to mention:
I have recently discovered how well buttermilk works for making cream sauces for pasta. Buttermilk is the ingredient that has been missing from my pasta sauces, all my life. Try it!

I have a friend (several actually) who use regular milk. Oh, sure. I've used regular milk, half&Half, heavy whipping cream. All good, but not the same as buttermilk. By the way, I would still use some milk and some butter and some cheese... the buttermilk is in addition.
