mcjr, speaking of smoke, how do you cook your ribs? i just throw them in the oven for 1.5 hrs at 350 foil half closed. BUT the last 10mins i stop bake put oven on broil and cook on broil LOW for 10mins. i also smother it in its own juices mixed with my homemade bbq sauce. about every 15mins or so. if i had my own grill and smoker id be making LOTS of smoked ahi (tuna). along with bbq delites. but alas all i have is an oven. the secret really is in the sauce.

if i were doing it on a grill id wait till mid/low fire then add coal when needed but have them very spread out also on top level.
there are so many ways...im sure the texans know.

I'm a Texan by every means possible but my Momma or Dad never really did ribs. If your marinade isn't a super secret I'd love to give it a go.
