How does bison ribs compare to beef ones? I have had bison burgers and steaks before but not ribs?

I haven't had ribs that weren't wild in ages, so I can't really make an informed comment. Personally, I find good wild game a lot tastier than beef.

I think the biggest thing is that wild ribs can be extremely tough if you don't age them and cook them right. These ones hung for about 3 weeks. To cook them, I first boiled them in gingerale for about 6 hours. I then covered them in a half and half mixture of ketchup and bbq sauce and baked them at about 350 for another couple hours. Final step is then a quick trip to the grill to give them the bbq edge.

Thanks. The handles are contoured some - not so much at the pommel. They're 1/4" so there's not a plethora of material there to work with. It's actually pretty comfortable. If they'd been 5/16" thk, I'd have made them more oval or egg shaped. It's always hard to tell when you've taken enough off the handle, but it's very easy to see when you've taken too much off. <img src="/ubbthreads/images/graemlins/smile.gif" alt="" /> I've made a few like this. This one is a little larger than the rest. My HF sander has about had enough.

That's good to know, the micarta I'm ordering will be 1/4" as well and I wasn't sure if that would be thick and comfortable enough.
