Still trying to decide whether to put a wicked convex on the NMSFNO, or keep the factory edge and sell the sucker. I'm having a hard time justifying hanging onto expensive INFI right now, because my SR-101 knives are performing at such an awesome level that the cost of INFI just doesn't seem justified. Is there really that huge of a difference in the 2 steels?

Is there really that huge of a difference in the 2 steels? Though passions run deep on this, I bet a metallurgist would be the only one that could appropriately answer this question. Is it worth the cost seems to be the question of the day.

Yes, there IS a huge difference - usually several hundred dollars <img src="/ubbthreads/images/graemlins/eek.gif" alt="" /> <img src="/ubbthreads/images/graemlins/shocked.gif" alt="" /> I haven't noticed ANY difference in performance, but there's so much of a difference with edge geometry and whatnot that it's hard to tell. I can tell you that the ONLY BLADE that chipped at all during my recent chopoff was made from INFI. Take that as you will.
