DO NOT USE THE SANDPAPER MOUSPAD TECHNIQUE.

use a flat couarse stone and keep a steady angle (one that you would like) until it's nice and thin.
THEN you can go with the sandpaper mousepad technique to convex your new thin edge.

it's worked for me.
you will wear some of the caoting away though it that matter to you.
I find I like some of the edge on my knives a little thinner for sure.
(although not too drastically thin)
it depends how the edge comes.

oh and just saying... you can ask Busse (not SY) to make your knife with a thin edge.... so I hear. (I'm not sure how reliable that info is, but from the varying edges I've seen on the same knives I think it's true... and someone on BF said that, so I'm not really sure.)
