I guess they coat the blades before they grind.
and to do a hihg convex grind wouldn't the belt just brush up against some points on the knife (as I've even found happens even when using the sandpaper/mouspad technique to get a high convex grind) and messses up the finish.
thats what I though jerry was talking about.

vic doesn't do full convex grinds on the knives BTW (well, the ones we've seen)
but even so I would think he would know when you try to go high you sometimes hit other parts of the blade.

this is just all from my understanding, but I'm not much of an expert either.

i raised the angle dramatically on my ranger without ruining the coat. HD's done it to plenty of knives.

A full or nearly full convex grind would start near the top of the blade. Some start midway, some further down. If you have a knife that already has a machine grind, saber, hollow, or flat, and you try to do a thin convex edge, the belt will make contact with the primary grind line and the final edge, leaving coating in between. This doesn't look too good, so I make my convex grinds on coated blades less acute than a factory convex grind. They are strong sharp edges, though, and cut very well.
