Are there any thoughts on what types
of water are used to clean a knife?
Would that speed up the rusting process?

I would think that Dionized water will pitt steel very quick?
Im not sure about the others.

I still say this is all in pursuit of unrealistic goals. Any knife you actually use will suffer a bit, chemically and mechanically. Provided with even a little bit of care, steel tools will last decades. It's not exactly like archiving cigars.

That said, water with salts in it will cause rust faster than clean water. Our well water is so brutal that it can even corrode some types of stainless surprisingly quick. Sea water has a variety of salts in it, and is notoriously bad for metals. But any water will cause rust if you leave the steel damp indefinitely.

I can't believe this thread is still alive! The DMDC is fine. Just put some oil on the blade or Tuf Cloth. Or just buy black crinkle coat blades and stainless ones.

lol I was just gonna ask the same question, why its still going....an uncoated blade is like your underwear, use em, clean em, your ready to go, or wear a diaper, saves ya time, but your still ready.....seriously though, my DMDC is actually one of my favs, no rust issues here, after I use it to the point where it needs cleaning up a lot, scotchbrite makes it seem like i have a new blade all over again

aaaaaaaaaaaaaawwwwwwwwwwwwwwwwwwww just use your knives hard! at the end of the day pile them all onto the table , crack open a case of beer and pull out the Hoppes #9 and a rag. wipe em down, drink a cold beer, and then oil them with gun oil.

good to go for the next days chopping, hacking slicing etc!
