i went with rack of lamb seasoned in a dijon, olive oil, black pepper, garlic, sea salt topped with a mix of bread crumbs and parmesean. came out delish! paired with wild rice and fresh focaccia

yea i used to do steaks kinda like that but wrapped in news paper and th seasalt was made into a brine and then soaked for a while... turned out great and even got won a few bucks when people didnt believe it would work.....
i do brine a decent amount mainly pork.... just cause its so dry

great news man thats always good... i been in surgery more times then i wanna remeber... the hard parts the recovery .... the nervous emotions before that probably second hardest thing to deal with.... he'll be fine....
im just enjoying the new coffee maker , and bumpin my post count.... been a pretty decent day would of been better if the new df showed up....
