They make a special kevlar weave for knife protection. Basically, it's the same fiber, but woven much tighter. It's great for stopping knives but sucks for stopping bullets. The standard kevlar vest has a much looser weave and is great for stopping bullets but sucks for stopping knives.

I prefer to put the blades to my own test. It's more fun that way!
