The blade shape is such that you can cut very straight lines. I cut a fair amount of vinyl flooring with it when I worked construction.
A Typical utility blade when used in some sort of holder is similiar to a wharncliff or sheepsfoot pattern, only disposable. That ought to give you an idea of it's utility. Like Jeeps said, they cut very straight lines. They also make a good defensive blade, as the design allows for you to use the full length of the cutting edge in a draw cut. IMO, tip strength is lessened a bit. There was an article in one of Guns magazine's annuals, I believe it was 2010s, on the different types of cutting edges available. I can't find it online, but it was packed with info. If I can dig up the edition, I will scan it for you.
