Carbon sharpens better, but the stainless still gets plenty sharp enough to do the job.

lazi, just get the m2k. it's not a throwaway, it's a benchmark.
too bad the 510 and 545 were discontinued, i'd recommend those too.

i think the 511 is the 510 with a finger guard. stainless would be the 546.
go with that one if you wanna keep it cheap. send it to me if you don't like it out of the box, i'll fix it up like mine. you'll hate the edge on all your other knives afterward.
