lots of work..... but they will be tasty in the winter... So, if I understand correctly, you not only grow your own beans (tomatoes too?) but you can them also? Kudos, my friend. It's something I definately will try later on in life when things calm down a bit. Nowadays there just don't seem to be enough hours in a day to start growing and processing my own veggies, the right way that is <img src="/ubbthreads/images/graemlins/sad.gif" alt="" /> Good for you!

Ha, just the other day I was saying to colleagues that I think the place I live is home to so many kinds of people from all over the world, that anybody could fit in right well here. I agree, it also has some drawbacks though...

IF you can get a good enough deal on the Veggies, buy them. Then all you will need is the canning supplies and equipment.
For Tomatoes we use a 16 quart pot to boil them in to get them ready for straining.
We use an 8 quart to catch the juice while straining the tomatoes.
We then bring the juice to a boil then turn off the heat. Take a one quart (or one pint) jar, put 1-2 teaspoons of salt in it then fill up to the bottom part where the threads start (about a half inch from the top of the jar).
Put on the lid and screw down the ring snugly. Then we put the jar in a pan (about 6 inches of water) that is just barely boiling and let them set for 20 minutes.
Remove from the water and let cool until you hear the lid "Pop" and the lid has been sucked down a bit. Then we just leave them alone for 12 hours to make sure they have had plenty of time to cool.

Bear, EVERYWHERE has some drawbacks. The trick is just learning to live/deal with them. If you can't you can't stay where you are.

God has had our family live in the camper for a few years before...... maybe he will do it agian. maybe god will have us park our camper in your driveway randy..............

There are a couple more steps that I didn't list as well.
Cut up the tomatoes. we like them to be no more than about 2 inches square. You also remove any of the actual stem. Also after filling the jar, wipe off the top of the jar with a clean dry cloth to remove anything that would cause it not to seal.
