In a numbered knife run of say 200 knives. I would think anything around the 75-100 would be best. First few you are still getting used to the model. by the end you are just going through the motions. :P

In a numbered knife run of say 200 knives. I would think anything around the 75-100 would be best. First few you are still getting used to the model. by the end you are just going through the motions. :P I know it works that way in bourbon bottling. Buy bottles from the middle of the batch.
