If that's what you're concerned about - perhaps you should collect something else.

Guess I'm missing the point from the "Fit and Finish" crowd.

I guess it all depends on what you are doing with the knives.Practicing a lot of traps and such like I find even the crinklcoat makes a difference to how my knives perform making notches etc. Once I removed the crinklcoat my SRKW M6 immediately cut better.
With this in mind I'm sure deep grind marks would make a similar difference.
Removing the crinklcoat I don't mind, sharpening I don't mind but man it would take me forever to smooth out those grind lines by hand !!! <img src="/ubbthreads/images/graemlins/crazy.gif" alt="" />
