The "stiffness" is, in my opinion, why SR101 makes such a great "slicer".

The "durable malleability" is, in my opinion, why INFI makes such a great "abuser / beater".

I guess my opinion, AT THIS POINT IN OUR DISCUSSION, is thus:

The materials serve different purposes. SR101 is a great general knife use material for people who value keen cutting edge and edge holding ability (most knife users). INFI is more specialized in that it excels in abusive use environments.
