The materials serve different purposes. SR101 is a great general knife use material for people who value keen cutting edge and edge holding ability (most knife users). INFI is more specialized in that it excels in abusive use environments.


I think that this sums up rather well the best uses for the two different steels. At least it does for this old Redneck.
