To clean that wood and sap off your knife just spray it down with WD-40 and wipe it down with a rag. That should clean it off and it wont hurt the finish.

You could also use some very fine sandpaper and put it on a mousepad to get those chips out of your edge. It would also convex your edge which is a stronger edge than a standard V edge.
