I'm convinced it's all a marketing ploy. Jerry sells knives that aren't very sharp so he can convince people to buy knives that are. He pumps up his dull knives with all kinds of neat finishes and slick handles and he pumps up his sharp knives with scratches and rough handles. And the beautiful thing is, people will trample each other to buy both. Brilliant!
