I'd go with Bruce on this one. If the only difference is coated vs non-coated with a carbon steel knife, I'll take coated (particularly if it's tan). I ordered Busse Combat CEs because the steel is, if not stainless, very stain-resistant. However, I'll buy what's available.
No, that isn't the only difference. The CE would come with a sharp convex edge.
