I should have phrased the second answer better so people who want it in a different but still stainless steel like 12c27 could have picked it so if you do prefer a different steel even if it is a stainless you can click #2.

I am starting to warm to the 12c27 idea. I am a good sharpener and still am having a heck of a time with my HC.
