just wondering, (because I'm pretty sure it makes a big difference) do you mean convex grind? or convex edge???
Good question emf, and it needs to be answered. There is definitely a big difference. A convex edge can be put on a knife fairly easily even by someone without a great deal of experience sharpening knives. A full convex grind on the other hand needs to be left to those who know what they are doing with a belt grinder.
