There are many ways to do this. Personally, I use a hand sander with various grits of wet/dry sandpaper to re-profile the edge to convex (personal choice - I like convex edges) and then I strop the edge on leather with black and then green compound. After it's sharp I really only have to maintain the edge with the strop. It very rarely needs sharpening unless the edge rolls.
I have had very good results with both SR77 and Infi. I guess a belt sander would be quicker and less trouble, but that means you can screw up faster as well. Here's by Mutt and ASH:
