I have eaten squirrels killed in Tennessee, South Carolina, and Georgia, and they were all tasty. Squirrel meat has a lot of flavor and tastes much better than chicken to me. If you pressure cook them they make a really good gravy. You can debone them and make Brunswick stew or Squirrel and dumplings. They are good roasted over a camp fire or fried, too.
