Great Chop Off! My kind of knives...
Re: Convex grinds. I had some old Blackjack knives (1-7, Trailguide...) with the convex grind. They were great at first, but I could never sharpen them just right again. Any tips on tools and technique for this gind? Thanks,
The leather on wood strops with compound work very well to maintain the convex edge. They are available from several sources, including KSF, Lee Valley, and some other one I just can't think of right now. Or you can make your own. If you strop them lightly after each use, they never get dull. It takes some practice to get the technique, but anyone can do it. Also, it is not absolutely critical that you remove steel. Often, I just lightly strop the final edge on a ceramic rod or steel to straighten the edge back out after use, like butchers do.
