Good explanation Randy. I have tried mirror edges, polished, and all that. I love a nice convex edge, but I find myself doing more of the course, medium, and a strop than anything else these days.

Course Edge.

I use my knives...hard...and a course edge retains longer.

I have found a more coarse edge is better for hard use. In my own personal opinion.

Had my say above and still hold to it. For a USING blade, I feel as if a course edge is better than one taken to a mirror finish.
