well with bbq there are 3 dift houses...rub....sauce... and rub &sauce....



i prefer a quick rub with frequent saucing. really with ribs its all about heat...seasoning is optinal...ive made ribs on a hibachi with just sea salt and beer...the outside was like a chip and the inside was juicy...but i had to tend to them for 1hr and used about 2 heinekens on them. for fall off the bone goodness youre gonna wanna use low heat and LOTS of time. one trick is to take the membrane off the back of the ribs (ie non meat side) that way the seasoning gets into the meat better and its more "fall off the bone".

sauces just use peppers (white & black), onions, catsup, worscht sauce, etc. some of those "cajun spice" pack deals arent bad....mostly though its trial and error....just buy a bunch of ribs and experiment!<img src="/ubbthreads/images/graemlins/grin.gif" alt="" />

take several lbs (20 is a good start) of ribs and cut into slabs of around 6 ribs sized.

marinate for 24 hours (in fridge) in the following:

- Guinness beer
- Wild turkey bourbon
- Teriakyi sauce
- finely shredded garlic and onions
- a bit of tabasco sauce.

Grilling time!

fire up the lump CHARCOAL grill or hibachi. Propane and Propane accessories are for Hank Hill types and are not to be used for fine grilling ribs like these. EVER! if you are a Hank Hill type of person, you may leave the grilling area now. <img src="/ubbthreads/images/graemlins/smile.gif" alt="" /> let the lump charcoal turn to white ash for several hours before grilling. we want to SLOW GRILL the ribs, not sear them

take the ribs out of the marinade, drain on a rack, and rub with the following mix:

- powdered sage leaf, coarse kosher salt (no iodine), dulse, cayenne pepper, paprika, cumin seed powder.

Grilling:

- brush olive oil onto the grill surface, and lay the ribs down. Add a pie pan of water soaked apple and mesquite wood chips on top of the lump charcoal. every once in a while, mist the wood chips with water. Near the end of the grilling, dump the wood chips onto the coals, so they start smoking. Flip the ribs and let them absorb the smoke.

serve with ice cold beer, niblet corn, chilli and hot buttered and cheddar cheese cornbread.

this is also a wicked way to grill brats and chorizo......slice nicks into the brats or chorizo and soak 24 hours, then the rub, then grill. Steaks too....


I may be Canadian, but deep down there is some Texan/Cajun/Creole in ME!

Well WDawg it must be a bad time for accidents....we just had a guy drive into the property through our dry stone wall and up onto the garage roof and then boucnce off a tree and back into the road....Dukes of Hazzard had nothing on this maniac...he must have been doing 80mph going into a tight bend....Crazy!!
My Aunt's car is badly damaged from flying stones...mine needs some re-spray work...and the gargage needs a fair bit of new roof and the wall needs re-building...but the driver walked free with out a scratch!!

On a good note...I managed to snag a Camp Tramp on the exchange at seemingly sensible money...all the good reports on this knife have had me wanting to try one and now I can.

Bye for now....going for a walk in the hills for my "OOOSSAAAAHH" therapy and to wind down....LOL....what a crazy time of it I have had lately...one thing after another...dealing with insurance companies is not the most simple or enjoyable of things...
