Tolly, that sounds great. Then I can see what a pig hunting knife looks like. I am sure the rush is great but after busting my ribs up I am out of jumping on a wild one right now.

So if our Union collapses like the Soviet Union did, will Texas become a free Republic again? Can I carry my bowie knife there then? I can't even ride a horse. We had tanks and jeeps when I was in the "cavalry". Can I still have pork barbeque? Inquiring minds want to know these things. <img src="/ubbthreads/images/graemlins/grin.gif" alt="" />

I would also be more than happy to throw a couple pork shoulders in the smoker for you if you don't like brisket or whole hog. I gotta tell you though, an 80-120lb wild hog split down the backbone and smoked with a mixture of Oak and Pecan for about 8-10 hours is pretty hard to beat! We inject the meat with creole garlic butter before putting it in the smoker as well <img src="/ubbthreads/images/graemlins/thumbup.gif" alt="" />

The in laws have a Polaris that I like to joy ride in, and when I am done fishing - which I have been doing as much as possible lately. I go beat the 4 wheelers up as well

I went to a hog cooking in SW GA one time. They split the whole hog down the middle and put each half on a grate. Then the hog was covered with some metal cover. They built a big fire nearby of white oak wood. All night long, they would shovel the coals up under the grate. That was the best pork I ever ate. Of course I had been up all night drinking beer and taking notes on the hog cooking. I slept right through the dove shoot that followed.
