...in the next few hours, it's probably the wife and I re-entering the atmosphere.

We're pressure canning for the first time. <img src="/ubbthreads/images/graemlins/ooo.gif" alt="" /> <img src="/ubbthreads/images/graemlins/laugh.gif" alt="" />

Should just lead to some tasty venison that has a shelf life of forever and a day, but you never know.

We survived.

It was pretty comical though, the two of us constantly asking "is it s'posed to do that?"
"...Ummm, let's stand over here instead. You know, just until we're sure..."

As I figured it's just like anything else that could be dangerous, follow the directions and you'll be fine.

Just venison so far. We did five jars of plain, and five with some onion seasoning.

You can really go nuts with different flavors to add. We've had some canned by our friends that was in some sort of Mexican type of seasoning, also some done with bbq sauce, and boy were they ever tasty meals.

What the heck, another handy skill to have that our Grandparents would just take for granted.

glad to hear it worked out well. We have only canned in a hot water bath. Obviously not good for what you were canning....
