I came across this in my search for an effective/foolproof way of sharpening a convex edge:
"If you have a Lansky, Gatco or DMT sharpening system, you can slightly bend one of the guide rods and grind convex edges with it. This means that you also get exactly the same convex curve every time you sharpen your knife. That is nice.
A straight guide rod guides the sharpener to go straight. A bended guide rod guides the sharpener to make a curve across the edge = convex grinding movement. (The bended guide rod lifts up the back end of the sharpener more and more when you move the sharpener forwards, across the edge).
The curved guide rod make exactly the same curve every stroke you do, that means that you very easy can maintain the convex edge - and you always get exactly the right curve you want to have.
The height of where the guide rod slides thru in the back end decides the convex curve (flat or steep). You can also bend the guide rod more, or less, so it fits the curves on your knife.

Any thoughts?
Also, does anyone here know if the Busse ASH-1 has a convex edge?
