You need chicken feet to make the best chicken soup. That's what my mother taught me, and she was right. You don't even have to serve the feet, unless money is really tight. Just use the feet to enrich the stock.

Alas that chicken feet became harder to find in American markets. Along with a lot of other good stuff I won’t mention to you picky eaters. When we visited Canada, Mom would bring back a cooler full of chicken feet and our chicken soup would get better for a while.
