I eyeball everything so I really don't know, but convex is my favorite. Glad I am not the only one, Pink. I'm always seeing posts on knife forums where "experts" debate the edge angle thing. Experts don't need to measure the grind angles.

Well I'm far from an expert on anything and have been eyeballing as I run the belt sander. My knives are pretty sharp(shave hair) but not as sharp as I would like. Just curious to approx angles.

If I had to estimate, I'd say around 20 degrees, more or less.

I got mine from KSF but I have seen others at Lee Valley and elsewhere that may be better.
