it's for indexing. it's pretty useful on larger blades in reducing leverage when you need to do more delicate work but you should have a smaller knife on hand for that anyway.
mostly for style.

I use choils occasionally - mostly when I'm sharpening a knife <img src="/ubbthreads/images/graemlins/rolleyes.gif" alt="" />

I have not even thought about it except opening a bottle of beer or soda. I do like the choil when I am sharpening.

Generally I don't either, although I have used it to choke up on the blade from time to time.
