Okay, this is a really dumb question but i read somewhere that to maintain the edge on INFI you only really need a strop with good compound... it sounds silly but i guess it kinda sounds viable since everywhere ive read, INFI never chips, so grinding on a stone (removing any material) is unnecessary so using a strop alone should.
INFI does chip. I've done it. It's not easy to make INFI chip, but it's quite possible.
I've also done plenty of damage that a strop alone won't repair. A good butcher's steel plus a strop, however, will fix even pretty major rolls.
That's not to say you'll never have to sharpen an INFI blade on a stone or sandpaper. It just means you won't have to do it as often.
And for me, personally, the first thing I've done with almost every Busse knife I own is to put a workable edge on it. The edges I've gotten from the factory on some Busses were downright pathetic. The only thing they would be good for at that obtuse of an angle is chopping concrete blocks. I like my knives to be able to cut, thank you very much, so the edge angle on mine often has to be significantly altered from the crazy blunt angles they put on in the factory.
I was INCREDIBLY disappointed in my NMSFNO the first time I used it. It was outchopped by almost every other knife I put to the test. After I put a shaving sharp convex edge on it, however, it became one of my favorites.
