What kind of oil do you guys use? I'm thinking mineral oil would be best... I use mineral oil on anything that is going to touch food, tufglide on everything else. Mineral oil is a petroleum distillate... not good for food stuffs....you really should rethink that.... while there is a "food grade" mineral oil, it is not really a food stuff, but a certification that it is "safe" for consumption, meaning that if you eat it , you are not going to die...but is acts as a laxative, so you can guess the rest.... It is often used in wooden kitchen implements over vegetable oils because it is less likely to go rancid, or spoil... I wood rather use olive oil...but that is just me... your mileage may vary Doc

Why would you want the Patina look ? To make it look old, or well used.... There is some speculation that it may inhibit rust.... I don't know that to be true, but it has some logic behind it... I do think that developing a natural patina is preferable to "faking" it.... Is kind of like pre-washing /tearing / and beating up jeans and selling them for more money that new ones.... instead of actually wearing them comfortable, you can buy them already worn out.... I don't think it worth my time... but, to each his own... Doc

Andy, and you would know this because.... hee hee, just asking, not really looking for an answer. I might find out more information that I really wanted. Besides someone had to ask, and might as well be me since I'm still at work, actually have half my shift to go, plus a half hour.

Wikipedia:
A simple and inexpensive way to remove rust from steel surfaces by hand is to rub the steel with aluminium foil dipped in water. Aluminium has a higher reduction potential than the iron in steel, which may help transfer oxygen atoms from the iron to the aluminium. The aluminium foil is softer than steel and will not scratch it, as steel wool will, but as the aluminium oxidizes, the aluminium oxide produced becomes a fine metal polishing compound.

Mineral oil is used as a laxative, but you take a couple of CCs to begin to produce that effect. The body basically can't process it at all, and it just lubricates its way through. Hence it is safe to eat. Though I guess if you drank the stuff constantly you'd have problems with dehydration because your large intestine would not have any time to reabsorb water.
Those looking to protect their food processing knives a bit might look into bee's wax.

I use nothing. A little surface rust just adds flavor. <img src="/ubbthreads/images/graemlins/wink.gif" alt="" /> My outdoor knives get a light spritz of silicone spray like you would find in your local auto parts place, but that's when they are going into storage for a while.
