I don't try and get a "razor edge" on my knives any more. I have found that for MOST the time my knife usage does not require an edge like that and that at least for my it is usually more fragile. I've been sold on the polished convex edge. All the benefits along with a significant strength increase. I like it!

I have threatened myself several times to TRY and do a convex edge but would need to assembly the items required and I already have a lot of stones/hones and have just sort of said EH, this has worked for all these years.
