55 Lbs (hanging weight) pig stuffed with brown sugar, garlic, sweet potatoes, walla walla sweet onions, oranges, apples and pineapple. Cook over apple wood and mesquite coals for 7 hours while rotating and constantly basting.
Crunchy and slightly sweet on the outside, moist, tender and full of flavor on the inside.
